Second in command of a 45-strong brigade across a fine-dining restaurant, a brasserie and banqueting, in a 1909 palace reopened in 2024. Precision, calm and generosity required.
Responsibilities
- Run the kitchen alongside the Executive Chef and lead the brigade in his absence
- Own quality, consistency and plating standards across all outlets
- Manage ordering, food cost and HACCP documentation
- Recruit, train and develop chefs de partie and commis
- Contribute to seasonal menu creation with Belgian and local produce
Candidate profile
- 3 to 5 years in luxury hotels or Michelin-level restaurants, including a first management role
- Strong organisational skills and cost awareness
- English required, French a plus
- Calm under pressure, generous with the team
